Saffron rice on a budget

Saffron rice

Today I thought I would give you a quick dish inspired by the rice dishes  my Spanish grandmother used to cook. It includes typical Mediterranean ingredients such as rice, peppers, onions, garlic and saffron but excludes chicken, fish or other ingredients to keep it an economical supper dish. The colours and taste make this a heart warming dish and I always find rice cooked in this way brings back happy childhood memories

Budget saffron rice:

Ingredients: (for 4 people)

  • 2 cups of Spanish rice
  • I medium onion
  • 1 green or red pepper
  • 1-2 cloves chopped garlic
  • 1 tin chopped tomatoes
  • 1 tbsp vegetable stock
  • 1 sachet of saffron powder
  • chopped parsley (optional)
  • salt and pepper.

Method:

  1. Chop onions, peppers, garlic and fry until golden brown.
  2. Add chopped tomatoes, a litre of vegetable stock,saffron, parsley and salt and pepper.
  3. Add rice and top up with sufficient boiling water to cover rice plus about a third more to enable rice to fluff up nicely without burning.
  4. Stir and cook for about 15 minutes or until rice softens. It is best to remove the pan from the heat just as the rice is softening and allow the rice to continue cooking in its own heat for about another 5 minutes.
  5. The flavours will improve if you let rice sit before serving.

Tip: If you overcook rice it will turn into a glutinous mass but you can rescue it by pouring a little boiling water into the pan and stirring it in gently. Adjust seasoning if required.
